Chocolate and peanut chewy goeey cookies
Chewy gooey cookies: stop searching, this is YOUR favorite recipe!
In a pan, roast peanut - 2 minutes max, not using any greasing ingredients, toss regularly, making sure not to burn the peanuts,
Set peanuts aside on a dish towel,
Using half of the sugar (50 g), make the caramel - pour a third of the sugar in a pan, let melt, add the second third, melt and finally add the third third until lightly caramelized,
As soon as the caramel is light, stir in roasted peanuts,
Once peanuts are well coated, transfer to a silicon pat (or a tray covered with baking paper), spread as evenly as possible,
Set aside to cool completely, meantime just carry on with the recipe,
Preheat your oven to 350°F (175°C),
Melt both Caramelia and dark chocolate in a sauce pan over a pot of simmering water,
In a large bowl, whisk egg whites,
Add remaining sugar in the whisked egg whites until firm and glossy,
Incorporate egg whites to melted chocolate using a spatula or large wooden spoon,
Blend in Caramelia chocolate chunks and caramelized peanut as well,
Prepare a baking tray, lining it with baking paper,
Using 2 teaspoons, shape little balls of cookie dough and drop and the baking tray, leave some space as they will spread,
Bake for 10 minutes,
At the end of the baking, cookies will have puffed and they will be quite soft, do not worry, they will harden when cooling,
Set aide to cool for 10 minutes before transferring to a cooling rack.
