Coffin cookies – Petits cercueils sablés à la cannelle {#glutenfree}

Voici une petite recette facile à faire et surtout que les enfants vont adorer à l’occasion d’Halloween. La pâte à l’amande et à la cannelle, n’est pas sans rappeler les étoiles de Noël – et pour cause, c’est ma recette d’étoiles de Noël à la cannelle sans gluten ^^ J’ai trouvé tout-à-fait par hasard un emporte-pièce en forme de cercueil. Le prix défiant toute concurrence, je n’ai pas résisté et je me suis lancée dans ces petits sablés gluten free à la plus grande joie d’une amie de passage et de ma colocLa décoration est donc un travail à 6 mains et le résultat est plutôt pas mal non ?

RECETTE

1. Ingrédients :

Biscuits

  • 200 g de poudre d’amande
  • 125 g de sucre roux
  • 45 g de blancs d’oeuf
  • 1 1/2 cuillères à café de cannelle
  • Zeste d’un demi citron

Glaçage**

  • 1 blanc d’oeuf
  • 150 g de sucre glace

** Cette fois, j’ai utilisé de la poudre de meringue (Wilton®) pour faire le glaçage. C’était une première pour moi et cela a surtout pour but de ne pas rajouter d’œuf à la recette. Ce glaçage est de plus tout-à-fait adapté pour les femmes enceintes qui ne peuvent pas manger d’œufs crus. Dans ce cas, utilisez :

  • 1 cuillère à soupe de poudre de meringue (Wilton®)
  • 150 g de sucre glace
  • 2 cuillères à soupe d’eau

2. Marche à suivre :

Biscuits

  • Mélangez tous les ingrédients secs : poudre d’amande, sucre, cannelle et zestes de citron,
  • Y ajoutez les blanc d’oeuf et mélangez jusqu’à l’obtention d’une boule de pâte,
  • Formez un disque avec la pâte, enveloppez-la dans du papier film et laissez reposer la pâte environ 1 heure au réfrigérateur,
  • Préchauffez votre four à 150°C,
  • Étalez la pâte antre deux feuilles de film ou avec un rouleau très légèrement fariné, gardez une épaisseur d’environ 1 cm,
  • Formez les petits cercueils avec un emporte-pièce avec un couteau et disposez-les sur une plaque couverte de papier cuisson,
  • Enfournez à 150°C pour 10 minutes puis laissez-les refroidir complètement sur une grille.
    Les biscuits seront encore un peu mous à la sortie du four, mais pas d’inquiétude, ils durcissent en refroidissant !

Glaçage

  • Battez le blanc d’œuf en neige et mélangez avec le sucre glace jusqu’à ce que vous ayez une consistance assez épaisse,

OU

  • Battez les ingrédients ensemble jusqu’à l’obtention d’une préparation ferme (environ 5 minutes au batteur),

PUIS

  • Déposez le glaçage sur les petits biscuits en formant les motifs effrayants ou amusants de votre choix, laissez sécher.

Here is an easy recipe and perfect for a time with your kids as they will love it for Halloween. The dough is made of almonds and cinnamon, and could really reminds you some of the Christmas stars – and you would be right, as it is my recipe of Christmas glutenfree cinnamon star ^^ I found a little coffin-shape cookie-cutter quite by chance. It was pretty cheap so I couldn’t not buy it and I get back home with the idea of some glutenfree cinnamon cookie. One of my friend was there and was really happy with my idea, so was my roommate. We made the icing all together and I think the result is good, isn’t it?

RECIPE

1. Ingredients:

Cookies

  • 2 cups (200 g, 7 oz.) almond meal
  • 2/3 cup (125 g, 4.4 oz.) cane brown sugar
  • 1 1/2 (45 g, 1.5 oz.) egg whites
  • 1 1/2 teaspoons cinnamon
  • Zest of half a lemon

Icing**

  • 1 egg white
  • 1 1/4 cup (150 g, 5.3 oz.) icing sugar

** This time, I used meringue powder (Wilton®) to fix the icing. It was the first time and the aim was above all not to add one more egg white to the recipe. This icing is perfect when one of your guest is pregnant as she can not eat raw egg whites. For this option, use:

  • 1 tablespoon meringue powder (Wilton®)
  • 1 1/4 cup (150 g, 5.3 oz.) icing sugar
  • 2 tablespoons water

2. Directions:

Cookies

  • Mix all dry ingredients: almond meal, sugar, cinnamon and lemon zest,
  • Add in egg whites and mic until the dough comes together,
  • Shape a disk with the dough, wrap it in plastic film and refrigerate it for about 1 hour,
  • Preheat your oven to 300°F (150°C, gas 2),
  • Roll out your dough between 2 sheets of plastic wrap / baking / wax paper or using a lightly floured rollin-pin, stay with a 1/2-in. thickness,
  • Cut the little coffins using a cookie-cutter or a knife, then transfer them to a tray cover with baking paper,
  • Bake for 10 minutes, then cool the cookies completely on a cooling rack.
    Cookies are still soft when they are out of the oven but they will harden while cooling.

Icing

  • Whisk egg whites and mix with icing sugar until you get a thick consistency,

OR

  • Whisk together all ingredients until you get a firm consitency (about 5 minutes if you use an electric whisk),

THEN

  • Pipe the icing on your biscuits, drawing some spooky or funny things, let the icing dry out.
